EGGLESS Vanilla Frosting
This is a super simple vanilla frosting recipe, that I adapt from Caity's Kitchen (caityskitchen.com). Caity has lots of allergy-friendly recipes on her site, mostly tailored for dairy-free, egg-free, and nut-free. Below is how we use it in our house because we are not dairy-free.
EGGLESS Vanilla Frosting
Ingredients:
- 2 tsp vanilla extract
- 1/2 cup solid vegetable shortening
- 1/2 cup butter, softened
- 4 cups confectioner's (powdered) sugar
- 2 tbs milk
Directions:

In a large bowl, beat shortening and butter until fluffy

Beat vanilla into the mixture
- Gradually add powdered sugar one cup at a time
- Gradually add milk until mixture is back to light and fluffy consistency
Notes:
- A veryyyy tiny bit of milk goes a long way! If the frosting is too dry, add a tiny bit of milk - like a drop! This will really soften it more than you think, and you can continue to add milk in small drops if needed. (If you add too much, add a little bit of powdered sugar, etc, etc).
- You can freeze this frosting! I always freeze the leftover in a kitchen container, and can scoop out whatever amount I might need (think those one-off school birthday parties), or use the rest. It defrosts quickly, and works well in a piping bag.
- This recipe is also peanut free, tree nut free, and sesame free - but we use brands that are within our comfort level as far as shared equipment.
