Apple Streusel Muffins (Eggless)

These muffins are SO perfect for Fall!  This is the second year we've made them after apple picking.  [Original recipe from justputzing.com written by Tina.]

EGGLESS BROWNIES

Muffin Ingredients:

  • 2 apples, peeled, cored, and diced
  • 2 cups flour
  • 2/3 cup white sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 large eggs (we substitute this with 2 tbs water, 1 tsp vegetable oil, 2 tsp baking powder per egg)
  • 3/4 cup milk
  • 1/4 cup butter, melted
  • 2 tsp cinnamon

Streusel Topping Ingredients:

  • 1/2 cup flour
  • 1/4 cup butter, melted
  • 1/3 cup brown sugar
  • cinnamon for sprinkling

Directions:

  1. Preheat the oven to 400 F.  Line a muffin tin with wrappers (our batch made 14).

  2. In a large bowl, mix together wet and dry ingredients for muffins until well combined.
  3. Gently stir in chopped apple.
  4. Scoop about 1/4 cup batter into each cupcake liner.  Cups should be about 3/4 full, set aside.
  5. In a medium bowl, mix together ingredients for streusel topping.
  6. Spoon streusel topping on top of batter in each muffin cup.  (We had enough to cover the entire top and a little extra).
  7. Sprinkle a little cinnamon on top of the streusel.
  8. Bake 20-25 min. (22 was perfect in our oven!)
